Meal Prep Insanity

This pic shows EXACTLY what I look like when I'm trying to figure out what to make for dinner.  Nah...Really I leave work to pick up the boys at school at 3:30 and rack my brain to figure out what we have at home that can be thrown together to constitute a "meal."  

We're all crazy busy.  The thought of making Sundays my meal prep day make me want to barf.  I've got great respect for all of you who have your ducks in a row.  I'm just not there right now.  Yes, there are moments where I am super fun and organized and channel my inner chef.   But...when I can't seem to find her, I play a game called "freezer fun".  This is a game where we pick a meat and veggie out of the freezer and prepare them in whatever manner we have time for with Grillin' Magic all over the place.   I'm a big fan of the instant pot but we tend to grill all year around - even in Minnesota.  

Feel free to play "freezer fun" anytime.  It's never steered me wrong.  :-) 

What's your favorite  veggie variety lately?  
Ours is roasted broccoli with olive oil and GM.  Bake in the oven at 425 degrees for about 35 minutes or until it starts getting blackened around the edges.  We like the broccoli to stay a bit crunchy.  If you have leftovers, roasted broccoli is amazing cold as a part o a charcuterie board.  (Fancy word for cheese and meat tray) . Shout out to all my Rochester Assembly Ladies who made the most amazing community charcuterie board.  It was epic.

Through all the crazy, keep in mind that the meals you put together are making way for a little time around the table with your family.  In our world today, the family meal is pretty important.  Whether you're eating scallops and steak or some mystery meat you found while playing "freezer fun"...it's the conversation that counts.  Keep the Grillin' Magic close and cook on!
